Snow Day and Homemade Hot Cocoa!

We got at least 4 inches of snow last night and woke up to both a layer of snow and a layer of ice. With more sleet today, schools are closed tomorrow as well.

Trent went sledding for the first time today and had honest to goodness snowball fights with his daddy and the neighbors. I even bundled up Chase until he could no longer move his arms and took him out to see the white stuff as well.

After coming back in to the warmth, we had the perfect kids lunch - warm Lightning McQueen soup and about four cups of hot chocolate for Trent. Even though we didn't have packets of hot chocolate in our cupboard, I found a recipe for scratch cocoa and it turned out really great. Here's the recipe in case anyone else out there is freezing and needs some good old fashion warm comfort in a mug!

 Hot Chocolate

Ingredients

  • 1 tablespoon HERSHEY'S Cocoa
  • Dash salt
  • 1 cup nonfat milk
  • 1/4 teaspoon vanilla extract
  • 2 tbsp sugar -OR- Sugar substitute with sweetening equivalence of 2 tablespoons sugar

Directions

Mix cocoa and salt in mug. Heat milk in microwave for 1-1/2 minutes or until hot. Gradually add hot milk to cocoa mixture in mug, stirring until well blended. Stir in vanilla and sugar /sugar substitute. (1 serving)

  2. Wasn't today so much fun! Ethan couldn't get enough of the snow, I'm sure Trent was the same way! We have to get together again soon, Ethan keeps asking where "that fun boy" is that came to play with him at the hospital :-)
